Equipment

  • Medium bowl

Ingredients

  • 1 lb chicken breasts
  • 3 tbsp sliced marinated olives
  • 1/2 cup + 2 tbsp juice from marinated olives
  • 1/4 cup organic mayonnaise, preferably with olive oil (see Notes)
  • 150 g broccoli florets

Instructions

  1. Preheat the oven to 400 F
  2. Marinate chicken in the olive juice for at least 3 hours, better overnight
  3. Thaw the broccoli if it is frozen
  4. Add 2 tbsp olive juice to the mayo
  5. Place chicken into the pan and pour in the mayo mix
  6. Place the broccoli on the sides and in between the chicken pieces
  7. scatter the sliced olives on top
  8. Put the pan in the oven and cook for 20-30 min depending on the oven.
  9. Once the chicken is cooked, broil for 3 min
  10. Serve!
